1 medium head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon cayenne pepper (optional)

1 cup buttermilk (or dairy-free alternative)

1 cup panko breadcrumbs

½ cup grated Parmesan cheese (optional)

2 tablespoons dried dill

2 tablespoons dried parsley

Cooking spray or oil for greasing

Preheat and Prepare: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly grease it with cooking spray or oil.

    Make the Breading Station: In a medium bowl, whisk together flour, garlic powder, onion powder, paprika, salt, black pepper, and cayenne pepper. In another bowl, pour the buttermilk. In a third bowl, mix the panko breadcrumbs, Parmesan cheese (if using), dried dill, and dried parsley.

      Coat the Cauliflower: Dip each cauliflower floret into the flour mixture, ensuring it’s fully coated. Shake off any excess flour, then dip it into the buttermilk to get it nice and wet. Finally, roll the floret in the panko breadcrumb mixture to coat evenly. Place the breaded florets on the prepared baking sheet.
