1 cup raw pumpkin seeds (unsalted)

1 cup granulated sugar

1/2 cup light corn syrup

1/4 cup unsalted butter

1/2 teaspoon vanilla extract

1/4 teaspoon baking soda

1/4 teaspoon salt

Prepare the Baking Sheet: Line a baking sheet with parchment paper or a silicone mat. This will prevent the brittle from sticking.

    Toast the Pepitas: In a dry skillet over medium heat, toast the pumpkin seeds for 3-4 minutes, stirring frequently, until they are golden and fragrant. Set aside to cool.

      Cook the Sugar Mixture: In a medium saucepan, combine the granulated sugar, light corn syrup, and butter. Cook over medium heat, stirring constantly until the mixture comes to a gentle boil.

        Add Flavorings: Once boiling, stop stirring and let the mixture cook undisturbed for about 5-6 minutes or until it reaches a light amber color. If using, add cinnamon during this stage for a warm spice note.
