Ingredients

1 pound fresh asparagus, trimmed

1 cup panko breadcrumbs

½ cup grated Parmesan cheese

½ teaspoon garlic powder

½ teaspoon paprika

½ teaspoon black pepper

1 large egg

1 tablespoon Dijon mustard

½ teaspoon salt

Olive oil spray or cooking spray for baking

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat for easy cleanup.

Prepare the Asparagus: Rinse and dry the asparagus thoroughly. Snap off the woody ends by gently bending each spear until it naturally breaks.

Make the Breading Mixture: In a shallow bowl, combine the panko breadcrumbs, grated Parmesan cheese, garlic powder, paprika, black pepper, and salt. Mix until evenly distributed.

Prepare the Egg Wash: In another bowl, whisk together the egg and Dijon mustard until well combined.

Coat the Asparagus: Dip each asparagus spear into the egg wash, allowing any excess to drip off. Then, roll the spear in the panko and Parmesan mixture, pressing gently to ensure it adheres well. Place the coated asparagus on the prepared baking sheet. Repeat until all spears are coated.

Spray for Crispiness: Lightly spray the tops of the coated asparagus fries with olive oil or cooking spray. This will help achieve a golden, crunchy finish.

Bake: Bake in the preheated oven for 12-15 minutes, or until the asparagus is tender and the coating is golden brown and crispy.

Serve: Remove from the oven and let cool for a minute. Serve immediately as a delicious snack or side dish, with your favorite dipping sauce on the side.
