2 cups elbow macaroni

4 cups sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1/4 cup grated Parmesan cheese

2 cups milk

1/4 cup unsalted butter

1/4 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon mustard powder

1/2 teaspoon paprika

Salt and pepper to taste

1 cup panko breadcrumbs

1/2 cup all-purpose flour (for dredging)

2 large eggs (beaten)

Cooking spray or oil for baking

Instructions
 

Cook Macaroni: In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Make Cheese Sauce: In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook for about 1 minute to create a roux. Gradually add the milk while whisking constantly to prevent lumps. Cook until the sauce thickens and bubbles, about 5-7 minutes.

      Add Seasonings and Cheese: Stir in the garlic powder, onion powder, mustard powder, paprika, salt, and pepper. Remove from heat and add the cheddar, mozzarella, and Parmesan cheeses. Stir until the cheeses are completely melted and the sauce is smooth.

        Combine with Pasta: Pour the cheese sauce over the cooked macaroni, stirring until well combined. Allow the mixture to cool for about 30 minutes.

          Shape into Balls: Once cooled, use your hands to form the macaroni mixture into small balls, about the size of a golf ball. Place them on a parchment-lined baking sheet.

            Prepare Breading Station: Set up three bowls: one with 1/2 cup of flour, one with beaten eggs, and one with panko breadcrumbs.

              Bread the Balls: Roll each mac & cheese ball in flour, tapping off excess. Then dip into the beaten eggs, followed by the panko breadcrumbs, ensuring they are well-coated. Place the coated balls back on the parchment-lined baking sheet.
