Ingredients

1 lb cooked turkey, shredded or diced

1 cup wild rice, rinsed

1 medium onion, finely chopped

2 cloves garlic, minced

3 medium carrots, diced

3 celery stalks, diced

1 cup mushrooms, sliced (optional)

6 cups low-sodium chicken or turkey broth

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 bay leaf

Salt and pepper to taste

1 cup heavy cream or coconut milk (optional for creaminess)

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions

Prep Your Vegetables: Start by washing and chopping all your vegetables. The onion, carrots, celery, and mushrooms should be diced/sliced to evenly distribute their flavors when they cook.

Sauté Aromatics: Heat olive oil in a skillet over medium heat. Add the chopped onion and garlic, sautéing until translucent (about 3-4 minutes). This will help bring out their flavors.

Combine in Crockpot: Transfer the sautéed onions and garlic to the crockpot. Add the shredded turkey, diced carrots, celery, mushrooms, and the rinsed wild rice to the pot.

Add Liquids and Seasonings: Pour in the chicken or turkey broth. Then, add dried thyme, dried rosemary, bay leaf, and season with salt and pepper. Stir well to combine.

Cook: Cover the crockpot and set it on low for 6-8 hours or on high for 3-4 hours. This allows the flavors to meld beautifully while cooking the wild rice to a perfect texture.

Check Consistency: About 30 minutes before serving, check the soup's consistency. If you like a creamier soup, stir in the heavy cream or coconut milk and let it warm through.

Finish and Garnish: Once cooked, remove the bay leaf and taste the soup, adjusting salt and pepper as needed. Ladle into bowls and garnish with fresh chopped parsley before serving.

Serve & Enjoy: Pair this warm turkey and wild rice soup with crusty bread or a side salad for a complete meal.
