6 ripe pears, peeled, cored, and diced

1/4 cup granulated sugar (or to taste)

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/2 teaspoon vanilla extract

Juice of 1 lemon

1 cup apple cider (or water)

1 tablespoon unsalted butter (optional)

Pinch of salt

Instructions
 

In a large mixing bowl, combine the diced pears, sugar, ground cinnamon, ground nutmeg, vanilla extract, lemon juice, and a pinch of salt. Toss gently to coat the pears evenly with the spices and sugar.

    Pour in the apple cider (or water) and stir until all ingredients are well combined.

      Transfer the pear mixture to the crockpot. If using, add the tablespoon of unsalted butter on top of the mixture for added richness.

        Cover the crockpot with the lid and set it to low heat for 4-6 hours, or until the pears are tender and the mixture has thickened to your desired consistency.

          After cooking, stir the compote well to break down some of the pears if you prefer a smoother texture. You can also use a potato masher or immersion blender for a more uniform consistency.

            Serve warm or chilled, on its own or over oatmeal, yogurt, pancakes, or ice cream. Store leftovers in an airtight container in the refrigerator for up to one week.
