Ingredients

1 can (15 oz) pumpkin puree (not pumpkin pie filling)

1 lb ground turkey or beef (your choice)

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes with green chilies

1 cup vegetable broth

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (any color), diced

2 tbsp chili powder

1 tsp ground cumin

1/2 tsp smoked paprika

1/2 tsp salt (more to taste)

1/4 tsp black pepper

1/2 tsp cinnamon (for warmth)

Optional toppings: sour cream, shredded cheese, avocado, fresh cilantro, or green onions

Instructions

Brown the Meat: In a skillet over medium heat, brown the ground turkey or beef until fully cooked. Drain any excess fat and transfer the meat to the crockpot.

Add Veggies: To the crockpot, add the diced onion, garlic, and bell pepper directly on top of the meat.

Combine the Main Ingredients: Pour in the pumpkin puree, diced tomatoes, kidney beans, black beans, and vegetable broth.

Season it Up: Sprinkle the chili powder, ground cumin, smoked paprika, salt, black pepper, and cinnamon over the mixture. Stir everything together until well combined.

Cook: Cover the crockpot and set it to cook on low for 6-8 hours or on high for 3-4 hours. The longer it cooks, the better the flavors will meld together.

Taste and Adjust: Once the cooking time is up, taste the chili. Adjust seasoning if necessary, adding more salt or spices to your liking.

Serve: Spoon the chili into bowls and add your desired toppings, such as sour cream, shredded cheese, avocado, fresh cilantro, or green onions.

Enjoy: Serve this warm, hearty chili alongside crusty bread or cornbread for a cozy meal.
