Crockpot Chicken Pot Pie

Ingredients
  

2 lbs boneless, skinless chicken thighs (or breasts)

4 cups of diced mixed vegetables (carrots, peas, corn, and green beans)

1 medium onion, finely chopped

3 cloves garlic, minced

4 cups low-sodium chicken broth

1 cup heavy cream

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

1/4 cup all-purpose flour

1 package (2 sheets) refrigerated pie crusts or puff pastry

Fresh parsley, chopped (for garnish)

Instructions
 

Prep the Chicken: Place the chicken thighs in the bottom of the crockpot. Season generously with salt and pepper.

    Add Veggies and Aromatics: Layer the diced mixed vegetables, chopped onion, and minced garlic on top of the chicken.

      Create the Broth Mix: In a separate bowl, whisk together the chicken broth, heavy cream, thyme, rosemary, flour, and a pinch of salt and pepper until well combined. Pour this mixture over the chicken and veggies in the crockpot.

        Cook: Cover the crockpot and cook on low for about 6-8 hours or on high for 4-5 hours. When the chicken is fully cooked, shred it with two forks and stir everything together to combine.

          Prepare the Pie Crust: About 30 minutes before serving, preheat your oven according to the pie crust package instructions. Roll out the pie crusts or puff pastry on a lightly floured surface.

            Assemble: Pour the chicken filling into a large baking dish and top it with the rolled-out pie crust. Cut slits in the crust to allow steam to escape. Optionally, brush the crust with a beaten egg for a golden finish.

              Bake: Place the baking dish in the oven and bake according to the crust instructions until golden brown and bubbling, typically around 25-30 minutes.

                Serve: Once the crust is golden and flaky, remove from the oven, let cool slightly, and garnish with fresh parsley. Serve hot and enjoy your comforting chicken pot pie!
