Ingredients

For the Meatballs:

1 lb ground chicken

1/2 cup breadcrumbs (preferably Italian seasoned)

1/4 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped

1 egg

2 cloves garlic, minced

1 tsp salt

1/2 tsp black pepper

1/2 tsp dried oregano

1/2 tsp dried basil

For the Sauce:

1 jar (28 oz) marinara sauce (store-bought or homemade)

1 tsp Italian seasoning

1/2 tsp red pepper flakes (optional, for heat)

For the Topping:

1 cup shredded mozzarella cheese

Extra grated Parmesan for serving

Fresh basil leaves for garnish

Instructions

Prepare the Meatballs:

In a large mixing bowl, combine ground chicken, breadcrumbs, grated Parmesan cheese, chopped parsley, egg, minced garlic, salt, pepper, oregano, and basil. Mix until just combined — avoid overmixing to keep meatballs tender.

      Shape the Meatballs:

Scoop out a tablespoon of the mixture and roll it into a ball. Repeat until all mixture is shaped into meatballs (should make about 20 meatballs).

          Brown the Meatballs (Optional):

For extra flavor, you can brown the meatballs in a skillet over medium heat for about 4-5 minutes until golden on all sides. This step is optional but adds depth to the flavor.

              Prepare the Sauce:

In a separate bowl, mix the marinara sauce with Italian seasoning and red pepper flakes, if using.

                  Combine in the Crockpot:

Place the meatballs in the bottom of the crockpot. Pour the marinara sauce over the meatballs, making sure they are fully covered.

                      Cook:

Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the meatballs are cooked through (reaching an internal temperature of 165°F or 74°C).

                          Add Cheese:

About 15 minutes before serving, sprinkle shredded mozzarella cheese over the meatballs. Cover and let it melt.

                              Serve:

Once the cheese is melted, serve the meatballs hot over cooked pasta or in a sub sandwich. Top with extra grated Parmesan and fresh basil leaves.
