Ingredients

2 cups rolled oats

4 cups almond milk (or any milk of your choice)

2 medium apples, peeled and diced (Granny Smith or Honeycrisp work well)

1/2 cup maple syrup (or brown sugar)

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

1/2 cup raisins (optional)

1/2 cup chopped walnuts or pecans (optional)

1 teaspoon vanilla extract

Additional toppings: sliced apples, chopped nuts, a drizzle of maple syrup, or a sprinkle of cinnamon

Instructions

Prepare the Crockpot: Lightly grease the inner pot of your crockpot with a bit of oil or cooking spray to prevent sticking.

Combine Ingredients: In a large bowl, mix the rolled oats, almond milk, diced apples, maple syrup, ground cinnamon, nutmeg, and salt. If using, stir in the raisins and chopped nuts at this stage.

Add to Crockpot: Pour the mixture into the prepared crockpot. Make sure to spread it evenly across the base.

Set the Heat: Cover the crockpot with its lid and cook on low for 6-8 hours or on high for 3-4 hours. The oats should be creamy and the apples tender when done.

Stir and Serve: Once cooking is complete, stir the mixture well before serving. If you prefer a creamier consistency, add a splash more milk.

Add Toppings: Serve warm in bowls, topped with sliced apples, a sprinkle of cinnamon, additional nuts, and a drizzle of maple syrup if desired.

Enjoy: Relax and enjoy your delicious, warm bowl of apple cinnamon oats!
