Crispy Tortilla Egg Quesadillas

4 large flour tortillas

4 large eggs

1 cup shredded cheddar cheese

1/2 cup diced bell peppers (red and green)

1/4 cup finely chopped onion

1/2 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons olive oil (for frying)

Fresh cilantro (for garnish)

Salsa and sour cream (for serving)

Instructions
 

Prepare the Filling: In a medium bowl, beat the eggs and season with salt, pepper, garlic powder, and smoked paprika. Set aside.

    Sauté Vegetables: In a non-stick skillet over medium heat, add 1 tablespoon of olive oil. Once heated, add the diced bell peppers and onions. Sauté for about 3-4 minutes, until they are softened. Remove from skillet and set aside.

      Cook the Eggs: In the same skillet, add the remaining tablespoon of olive oil. Pour in the beaten eggs and scramble them until fully cooked. Mix in the sautéed vegetables and remove from heat.

        Assemble the Quesadillas: Lay one tortilla flat in the skillet. On half of the tortilla, layer 1/4 cup of the scrambled egg mixture and half of the shredded cheddar cheese. Fold the tortilla in half, covering the filling.

          Crisp the Tortilla: Cook the folded quesadilla in the skillet over medium heat for about 3-4 minutes on one side until golden brown. Carefully flip and cook for another 3-4 minutes until the other side is crispy and the cheese is melted.

            Repeat: Repeat the assembly and cooking process with the remaining tortillas and filling.

              Serve: Remove the quesadillas from the skillet and let them cool for a minute. Cut them into wedges, garnish with fresh cilantro, and serve with salsa and sour cream on the side.
