Crispy Sweet Potato Nachos

2 large sweet potatoes

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

½ teaspoon chili powder

Salt and pepper to taste

1 cup black beans, rinsed and drained

1 cup shredded sharp cheddar cheese (or a vegan cheese alternative)

1 ripe avocado, diced

½ cup diced tomatoes

¼ cup sliced jalapeños (fresh or pickled)

¼ cup sour cream or Greek yogurt (optional)

Fresh cilantro for garnish

Lime wedges for serving

Instructions
 

Prepare the Sweet Potatoes: Preheat your oven to 400°F (200°C). Wash and peel the sweet potatoes, then slice them into thin rounds or wedges (about 1/4 inch thick). Try to make them as uniform as possible for even cooking.

    Season the Chips: In a mixing bowl, toss the sweet potato slices with the olive oil, garlic powder, smoked paprika, chili powder, salt, and pepper until they are well coated.

      Bake the Chips: Arrange the sweet potato slices in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for about 25-30 minutes, flipping halfway through, until they are crispy and golden brown.
