Ingredients

1 cup fresh spinach, chopped

1 cup canned artichoke hearts, drained and chopped

1/2 cup cream cheese, softened

1/4 cup sour cream

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1 clove garlic, minced

1/2 teaspoon onion powder

1/4 teaspoon red pepper flakes (optional for a kick)

Salt and pepper to taste

1 cup breadcrumbs (panko recommended for extra crispiness)

Olive oil spray or melted butter for drizzling

Instructions

Preheat the Oven: Start by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

Combine Ingredients: In a large mixing bowl, combine the chopped spinach, chopped artichoke hearts, softened cream cheese, sour cream, mozzarella cheese, Parmesan cheese, minced garlic, onion powder, red pepper flakes (if using), salt, and pepper. Mix until well combined and the mixture is creamy.

Form Bites: Use a small cookie scoop or your hands to form bite-sized portions of the mixture and place them on the prepared baking sheet. Keep them evenly spaced.

Add Breadcrumbs: In a shallow bowl, place the breadcrumbs. Roll each spinach artichoke bite in the breadcrumbs, ensuring they are fully coated. This will create that delightful crispy exterior.

Coat with Oil: Lightly spray or drizzle the coated bites with olive oil or melted butter. This step is essential for achieving a golden, crispy finish.

Bake: Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the bites are golden brown and crispy.

Cool and Serve: Once baked, allow the bites to cool for a few minutes. Serve them warm with your favorite dipping sauce, such as marinara or ranch!
