Crispy Shrimp Balls with Sweet Chili Sauce

Ingredients
  

1 lb (450g) raw shrimp, peeled and deveined

1 cup panko breadcrumbs

1/4 cup all-purpose flour

2 green onions, finely chopped

1 egg, beaten

2 cloves garlic, minced

1 tsp ginger, grated

1 tbsp soy sauce

1/2 tsp sesame oil

1/2 tsp salt

1/4 tsp black pepper

1 cup vegetable oil (for frying)

For the Sweet Chili Sauce:

1/2 cup sweet chili sauce

1 tsp lime juice

1/2 tsp soy sauce

1 tsp sesame seeds (for garnish)

Fresh cilantro leaves (for garnish)

Instructions
 

Prepare the Shrimp Mixture: In a food processor, add the raw shrimp, green onions, garlic, ginger, soy sauce, sesame oil, salt, and black pepper. Pulse until the mixture is finely chopped but not pureed. You want some texture in the mixture.

    Form the Balls: Transfer the shrimp mixture to a bowl and add the beaten egg and flour. Mix until well combined. Shape the mixture into small balls, about 1 inch in diameter.

      Coat the Balls: Place the panko breadcrumbs in a shallow dish. Roll each shrimp ball in the breadcrumbs, pressing gently to adhere the coating.

        Heat the Oil: In a deep skillet or frying pan, heat the vegetable oil over medium-high heat. To test if the oil is hot enough, drop in a few breadcrumbs; they should sizzle immediately.

          Fry the Shrimp Balls: Carefully add the shrimp balls to the hot oil in batches, being careful not to overcrowd the pan. Fry for about 3-4 minutes, turning occasionally, until they are golden brown and crispy. Use a slotted spoon to remove them and transfer onto a paper towel-lined plate to drain excess oil.
