Crispy Ranch Cauliflower Tots

1 medium head of cauliflower, cut into florets

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/2 cup almond flour (or breadcrumbs for a non-keto version)

2 large eggs

1 packet (1 oz) ranch seasoning mix

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

Optional: Fresh herbs (like parsley or chives) for garnish

Cooking spray or olive oil (for baking)

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    Steam Cauliflower: In a steamer basket over boiling water, steam the cauliflower florets until fork-tender, about 6-8 minutes. Alternatively, you can microwave the florets in a covered dish with a little water for about 5 minutes. Drain well and allow to cool.

      Mash Cauliflower: Once the cauliflower is cool enough to handle, add it to a large mixing bowl. Use a potato masher or fork to mash until it’s smooth and there are no large lumps.

        Mix Ingredients: To the mashed cauliflower, add the mozzarella cheese, Parmesan cheese, almond flour, eggs, ranch seasoning, garlic powder, onion powder, salt, and black pepper. Mix until everything is well combined.

          Shape Tots: Using your hands, scoop out a tablespoon of the mixture and roll it into a small tot shape (like a mini football). Place each tot on the prepared baking sheet, ensuring they’re spaced evenly apart.

            Prepare for Baking: Lightly spray the tops of the tots with cooking spray or brush with olive oil to help them crisp up while baking.

              Bake: Bake in the preheated oven for 25-30 minutes, flipping halfway through, until golden brown and crispy on the outside.

                Serve: Remove from the oven and let cool for a few minutes. Garnish with fresh herbs if desired. Serve warm with your favorite dipping sauce such as ranch, yogurt dip, or marinara.
