1 lb chicken tenderloins

1 cup buttermilk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

½ teaspoon black pepper

½ teaspoon salt

1 cup crushed pecans

1 cup panko breadcrumbs

½ cup all-purpose flour

2 large eggs

Cooking spray (or vegetable oil for frying)

Marinate the Chicken: In a large bowl, combine the buttermilk, garlic powder, onion powder, paprika, black pepper, and salt. Add the chicken tenderloins, ensuring they are well coated. Cover and refrigerate for at least 30 minutes (or up to 2 hours) to tenderize and infuse flavor.

    Prepare the Crust: In a shallow dish, combine the crushed pecans and panko breadcrumbs. In another shallow dish, place the all-purpose flour. In a third dish, beat the two large eggs until well mixed.

      Coat the Chicken:

        - Remove the marinated chicken from the buttermilk mixture, allowing excess to drip off.

          - Dredge each tenderloin in the flour, shaking off the excess.

            - Dip into the beaten eggs, ensuring they are fully coated.

              - Finally, press the chicken tenders into the pecan and panko mixture, ensuring they are well covered for maximum crunch.

                Cook the Tenders:

                  - Oven Method: Preheat your oven to 400°F (200°C). Place a wire rack on a baking sheet and spray it lightly with cooking spray. Arrange the coated chicken tenders in a single layer on the rack. Lightly spray the tops of the tenders with cooking spray to help them crisp. Bake for 20-25 minutes or until golden brown and cooked through, reaching an internal temperature of 165°F (75°C).

                    - Frying Method: In a large skillet, heat about ½ inch of vegetable oil over medium-high heat. Once hot, carefully add the chicken tenders in batches, cooking for about 3-4 minutes per side or until they are golden brown and fully cooked. Use a slotted spoon to remove them from the oil and drain on paper towels.

                      Serve: Allow the tenders to rest for a few minutes. Serve warm with your favorite dipping sauces, such as honey mustard or BBQ sauce.
