Crispy Parmesan Zucchini Chips

2 medium zucchinis

1 cup grated Parmesan cheese

1 cup seasoned breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

1/2 teaspoon black pepper

1/4 teaspoon salt

2 large eggs

Olive oil spray (or a drizzle of olive oil)

Preheat Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare Zucchini: Wash the zucchinis and slice them into thin rounds, about 1/4 inch thick. Pat them dry with a paper towel to remove excess moisture.

      Prepare Breading Station: In a shallow bowl, whisk the eggs until well beaten. In another bowl, combine the grated Parmesan cheese, seasoned breadcrumbs, garlic powder, onion powder, paprika, black pepper, and salt. Mix well to ensure even seasoning.

        Coat Zucchini Slices: Dip each zucchini round into the beaten eggs, allowing the excess to drip off. Then, transfer the zucchini to the cheese and breadcrumb mixture, pressing gently to coat each side thoroughly.
