Ingredients

2 large sweet potatoes

1 cup grated Parmesan cheese

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 teaspoon sea salt

1/2 teaspoon black pepper

Fresh parsley, chopped (for garnish, optional)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line two baking sheets with parchment paper.

Prepare Sweet Potatoes: Wash and scrub the sweet potatoes thoroughly. Using a mandoline or a sharp knife, slice the sweet potatoes into thin rounds, about 1/8 inch thick.

Season the Chips: In a large bowl, combine the sweet potato slices with the olive oil, garlic powder, smoked paprika, sea salt, and black pepper. Toss well to ensure all slices are evenly coated.

Add Parmesan: Add the grated Parmesan cheese to the bowl. Toss again until all sweet potato slices have a light coating of cheese.

Arrange on Baking Sheets: Lay the sweet potato slices in a single layer on the prepared baking sheets, ensuring they do not overlap.

Bake: Place the baking sheets in the preheated oven and bake for 15 minutes. After 15 minutes, flip the chips over and bake for an additional 10-15 minutes until they are golden brown and crispy. Keep an eye on them to prevent burning!

Cool and Garnish: Once done, remove the chips from the oven and let them cool on the baking sheets for a few minutes. This helps them crisp up even more. If desired, sprinkle freshly chopped parsley over the cool chips for an extra pop of color and flavor.

Serve: Enjoy your crispy Parmesan sweet potato chips as a tasty snack or a side dish. Pair them with a dipping sauce like ranch or aioli for an added treat!
