Crispy Parmesan Baked Mushroom Fries

1 lb (450g) large portobello mushrooms or white button mushrooms

1 cup all-purpose flour

2 large eggs

1 cup panko bread crumbs

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

¼ teaspoon cayenne pepper (optional, for extra heat)

Cooking spray or olive oil for drizzling

Fresh parsley, chopped for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Mushrooms: Clean the mushrooms by wiping them with a damp cloth. Remove the stems and slice the caps into fry-like shapes, about ½ inch thick.

      Set Up Breading Station: In three separate shallow dishes, place the flour in the first one, beat the eggs in the second, and mix the panko bread crumbs, grated Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, black pepper, and cayenne pepper in the third.

        Bread the Mushroom Fries:

          - First, dip each mushroom slice in the flour, shaking off any excess.

            - Next, dip it into the beaten eggs, ensuring it’s fully coated.

              - Finally, press the mushroom into the panko-Parmesan mixture, ensuring it’s well coated on all sides. Place the breaded fries on the prepared baking sheet.

                Bake Until Crispy: Once all the mushrooms are coated, lightly spray them with cooking spray or drizzle them with olive oil to help them crisp up. Bake in the preheated oven for about 20-25 minutes, turning halfway through, until golden brown and crispy.
