1 cup (125g) all-purpose flour

2 large eggs, beaten

1 cup (100g) breadcrumbs (preferably Panko for extra crunch)

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon dried oregano

1/2 teaspoon paprika

Salt and pepper, to taste

12-16 mozzarella cheese sticks, cut in half

Oil for frying (vegetable or canola)

Marinara sauce, for serving (optional)

Prepare the Battering Station: Set up a breading station by placing the all-purpose flour in one shallow bowl, the beaten eggs in another, and the breadcrumbs mixed with garlic powder, onion powder, oregano, paprika, salt, and pepper in a third bowl.

    Stuff the Mozzarella: Take each half of the mozzarella stick and dip it lightly in the flour to coat, then dip it in the beaten egg, making sure it’s fully covered. Finally, roll it in the seasoned breadcrumbs, pressing firmly to ensure the coating adheres. Repeat this process for all mozzarella halves.

      Chill for Better Texture: Place the breaded mozzarella bites on a parchment-lined baking sheet and chill in the freezer for at least 30 minutes. This step helps the cheese firm up and prevents it from melting too quickly during frying.

        Heat the Oil: In a large pot or deep skillet, pour in enough oil to submerge the bites (about 2-3 inches deep). Heat the oil over medium heat until it reaches 350°F (175°C). You can test the oil by dropping in a small piece of bread; it should sizzle immediately if the oil is ready.

          Fry the Bites: Carefully add a few mozzarella bites to the hot oil, being careful not to overcrowd the pot. Fry them for about 2-3 minutes or until they are golden brown and crispy. Use a slotted spoon to remove them and transfer them to a paper towel-lined plate to drain excess oil.
