Ingredients

12 fresh jalapeños

8 oz cream cheese, softened

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 tsp garlic powder

1 tsp onion powder

1/2 tsp smoked paprika

Salt and pepper, to taste

1 cup all-purpose flour

2 large eggs

1 cup panko bread crumbs

Vegetable oil, for frying

Instructions

Prep the Jalapeños: Start by preheating the oven to 375°F (190°C). Carefully slice the jalapeños in half lengthwise, removing the seeds and membranes (wear gloves to avoid irritation).

Make the Cheese Filling: In a mixing bowl, combine the softened cream cheese, cheddar cheese, mozzarella cheese, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well until all ingredients are well incorporated.

Stuff the Jalapeños: Using a small spoon or a piping bag, fill each jalapeño half generously with the cheese mixture.

Set Up a Breading Station: In three separate dishes, place the flour in the first dish, whisk the eggs in the second, and add the panko bread crumbs to the third.

Coat Each Jalapeño: Dip each stuffed jalapeño first into the flour, shaking off the excess. Next, dip it into the whisked egg, ensuring it’s completely coated, and finally, coat it with panko bread crumbs. Press the crumbs to adhere well.

Fry the Poppers: In a large skillet or deep fryer, heat vegetable oil over medium heat until shimmering (about 350°F or 175°C). Carefully add the breaded jalapeños in batches, frying until golden brown and crispy, about 3-4 minutes per side. Use a slotted spoon to transfer to a plate lined with paper towels to drain any excess oil.

Bake for Extra Crispiness (Optional): If you’d like a little extra crunch, after frying, you can place the poppers in the preheated oven for an additional 5-7 minutes.

Serve: Serve your crispy jalapeño cheese poppers immediately with your choice of dipping sauce, such as ranch, spicy aioli, or salsa.
