Crispy Fruit Pizza Tacos

1 package (12 oz) refrigerated sugar cookie dough

1 cup cream cheese, softened

1/2 cup powdered sugar

1 tsp vanilla extract

1/4 tsp almond extract (optional)

1 cup Greek yogurt (vanilla or plain)

2 cups mixed fresh fruits (strawberries, blueberries, kiwi, banana, and mandarin oranges)

1/4 cup shredded coconut (optional)

1/4 cup granola (for crunch, optional)

Zest of 1 lemon (for garnish)

Mint leaves (for garnish, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Make the Taco Shells:

      - Roll the sugar cookie dough into small balls (about the size of a golf ball).

        - Place each ball on a parchment-lined baking sheet, flattening them slightly to form discs.

          - Bake for 10-12 minutes, or until the edges are golden brown. Remove from the oven and let cool for about 5 minutes.

            Shape into Tacos:

              - While still warm, use a spatula to gently pick up each cookie disc and drape it over the edge of a bowl or a taco holder to create a taco shell shape. Allow to cool completely and harden in that shape.

                Prepare the Cream Cheese Mixture:

                  - In a mixing bowl, combine the cream cheese, powdered sugar, vanilla extract, and almond extract (if using). Beat until smooth and creamy.

                    Layer the Filling:

                      - Once the taco shells have cooled completely, start by spooning a layer of the cream cheese mixture into the bottom of each taco shell.

                        - Add a layer of Greek yogurt on top of the cream cheese layer.

                          Top with Fruits:

                            - Arrange the fresh fruits beautifully over the yogurt. You can create patterns or just pile them high for a colorful display.

                              Add Final Touches:
