Crispy Eggplant Marinara Bites

1 medium eggplant, sliced into 1/2-inch rounds

1 cup all-purpose flour

2 large eggs, beaten

1 cup breadcrumbs (preferably Panko for extra crispiness)

1 teaspoon garlic powder

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup marinara sauce (store-bought or homemade)

1 cup shredded mozzarella cheese

Fresh basil leaves for garnish

Olive oil for frying

Prep the Eggplant: Sprinkle the eggplant slices with salt and lay them out on a paper towel. Let them sit for about 30 minutes. This draws out excess moisture and helps to reduce bitterness.

    Set Up Breading Station: In three separate shallow dishes, place the flour in one, the beaten eggs in another, and mix the breadcrumbs with garlic powder, Italian seasoning, salt, and black pepper in the third.

      Bread the Eggplant: Pat the eggplant slices dry with paper towels. Dip each slice first into the flour, then into the beaten eggs, and finally coat them with the seasoned breadcrumbs. Make sure each slice is evenly coated.

        Fry the Eggplant: In a large skillet, heat about 1/4 inch of olive oil over medium heat. Once hot, add the breaded eggplant slices in batches. Fry for about 3-4 minutes on each side, or until golden brown and crispy. Remove from the skillet and place on a paper towel-lined plate to absorb excess oil.

          Build the Bites: Preheat your oven to 400°F (200°C). On a baking sheet, place the fried eggplant slices in a single layer. Spoon a tablespoon of marinara sauce on top of each slice, then sprinkle a generous amount of shredded mozzarella cheese over the marinara.

            Bake: Place the baking sheet in the preheated oven and bake for about 10-12 minutes, or until the cheese is bubbly and slightly golden.
