Crispy Eggplant Air-Fryer Rounds

1 medium eggplant, sliced into ½-inch thick rounds

1 cup all-purpose flour

2 large eggs, beaten

1 cup panko breadcrumbs

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

Olive oil spray (or any cooking spray)

Optional: Fresh herbs (like parsley or basil) for garnish

Prep the Eggplant: Sprinkle the eggplant rounds with salt and let them rest for about 20-30 minutes to draw out moisture and bitterness. Rinse and pat dry with paper towels.

    Set Up Your Breading Station: In three separate shallow dishes, place the flour in the first, beaten eggs in the second, and mix together the panko breadcrumbs, Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and pepper in the third.

      Bread the Eggplant: Dip each eggplant round first into the flour, shaking off any excess. Next, coat it in the beaten eggs, allowing any excess to drip off. Finally, press the round into the panko mixture until fully covered. Set aside on a wire rack or parchment paper.

        Preheat the Air Fryer: Set your air fryer to 400°F (200°C) and let it preheat for about 5 minutes.
