Crispy Chickpea Veggie Tacos

1 can (15 oz) chickpeas, rinsed and drained

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon garlic powder

1/2 teaspoon cayenne pepper (adjust for spice preference)

Salt and pepper, to taste

8 small corn tortillas

1 cup shredded red cabbage

1 cup diced tomatoes

1 avocado, diced

1/2 cup fresh cilantro, chopped

1 lime, cut into wedges

Optional: 1/2 cup feta cheese or vegan cheese for topping

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) to get those chickpeas crispy.

    Prepare the Chickpeas: On a baking sheet, combine the chickpeas, olive oil, smoked paprika, ground cumin, garlic powder, cayenne pepper, salt, and black pepper. Toss them until evenly coated.

      Bake the Chickpeas: Spread the chickpeas in a single layer on the baking sheet. Bake for 25-30 minutes, stirring halfway through, until they are golden brown and crispy.

        Warm the Tortillas: While the chickpeas are baking, warm the corn tortillas. You can do this on a skillet over medium heat for about 30 seconds on each side, or wrap them in foil and heat in the oven.

          Assemble the Tacos: Once the chickpeas are ready, remove them from the oven. On each tortilla, layer some shredded cabbage, a generous spoonful of the crispy chickpeas, diced tomatoes, and diced avocado.

            Add Freshness: Top with fresh cilantro and a sprinkle of feta cheese, if using. Squeeze lime juice over the tacos for an added burst of flavor.
