Crispy Chickpea Caesar Salad

1 can (15 oz) chickpeas, drained and rinsed

2 tbsp olive oil

1 tsp garlic powder

1 tsp smoked paprika

Salt and pepper, to taste

4 cups romaine lettuce, chopped

1 cup cherry tomatoes, halved

1/2 cup grated Parmesan cheese (or vegan alternative)

1/4 cup low-fat Caesar dressing (or homemade)

Lemon wedges, for serving

Instructions
 

Prepare the Chickpeas: Preheat your oven to 400°F (200°C). In a mixing bowl, combine the drained chickpeas, olive oil, garlic powder, smoked paprika, salt, and pepper. Toss until the chickpeas are well coated.

    Roast the Chickpeas: Spread the chickpeas in an even layer on a baking sheet lined with parchment paper. Roast in the preheated oven for about 25-30 minutes, or until golden brown and crispy, shaking the pan halfway through to ensure even cooking.

      Prepare the Salad Base: While the chickpeas are roasting, chop the romaine lettuce and halve the cherry tomatoes. In a large salad bowl, combine the romaine and tomatoes.

        Add the Cheese: Sprinkle the grated Parmesan over the salad mixture, reserving a little for garnish if desired.

          Dress the Salad: Once the chickpeas are done roasting, let them cool slightly before adding them to the salad. Drizzle the Caesar dressing over the salad and toss everything gently until well combined.

            Serve: Serve the salad chilled or at room temperature, garnished with the reserved Parmesan and lemon wedges on the side for an extra zing.
