1 lb ground chicken

1 tablespoon sesame oil

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 red bell pepper, finely chopped

1 cup water chestnuts, diced

2 green onions, chopped

1/4 cup soy sauce (or tamari for gluten-free)

1 tablespoon rice vinegar

1 tablespoon hoisin sauce

1 teaspoon sriracha (adjust to taste)

Salt and pepper to taste

1 head of iceberg lettuce (or butter lettuce leaves) for wrapping

Optional toppings: chopped peanuts, cilantro, lime wedges

Cook the Chicken: In a large skillet, heat the sesame oil over medium heat. Add the ground chicken, breaking it apart with a wooden spoon. Cook until no longer pink, about 5-7 minutes.

    Add Aromatics: Stir in the minced garlic and ginger. Sauté for an additional 1-2 minutes until fragrant.

      Incorporate Vegetables: Add the chopped red bell pepper, water chestnuts, and green onions to the skillet. Cook for another 3-4 minutes, allowing the vegetables to soften slightly.

        Create the Sauce: In a small bowl, whisk together the soy sauce, rice vinegar, hoisin sauce, and sriracha. Pour this mixture over the chicken and vegetable mixture, stirring to combine. Season with salt and pepper to taste.

          Simmer: Reduce the heat to low and let the mixture simmer for about 5 minutes, allowing the flavors to meld together.

            Prepare the Lettuce: While the filling is simmering, carefully separate the lettuce leaves and rinse them under cold water. Pat dry with a paper towel.
