Crispy Chicken Caesar Sandwich Melts

Ingredients
  

2 cups cooked chicken, shredded or diced

1/2 cup Caesar dressing

1/4 cup grated Parmesan cheese

1 cup romaine lettuce, chopped

1/2 cup cherry tomatoes, halved

1/4 teaspoon garlic powder

1/4 teaspoon black pepper

8 slices of sourdough bread (or bread of choice)

1 cup mozzarella cheese, shredded

2 tablespoons olive oil

Optional: 1/4 cup crispy bacon bits

Optional: extra shaved Parmesan for topping

Preheat the Grill or Pan: Heat a large skillet over medium heat or preheat your panini press. If using the skillet, add a tablespoon of olive oil and let it warm up.

    Prepare Chicken Mixture: In a bowl, combine the shredded or diced chicken, Caesar dressing, grated Parmesan cheese, garlic powder, black pepper, and any optional bacon bits. Mix well until the chicken is evenly coated.

      Assemble the Sandwiches: Take a slice of bread, spread a generous amount of the chicken mixture onto it, then add a handful of chopped romaine lettuce and a few cherry tomato halves. Sprinkle with shredded mozzarella cheese before topping with another slice of bread.
