Ingredients

8 small corn tortillas

1 cup thinly sliced salami

1 cup sliced pepperoni

1 cup crumbled feta cheese

1 cup shredded aged cheddar cheese

1 cup sliced Kalamata olives

1 cup arugula or mixed greens

1 ripe avocado, sliced

1 tablespoon olive oil

1 teaspoon smoked paprika

Freshly ground black pepper to taste

Fresh herbs (parsley or basil) for garnish

Optional: Hot honey or balsamic glaze for drizzling

Instructions

Prepare the Tortillas: Heat a non-stick skillet over medium heat. Brush each corn tortilla lightly with olive oil and sprinkle with smoked paprika on both sides. Place them in the skillet one by one, cooking for about 1-2 minutes on each side until they are golden and crispy. Remove from the skillet and set aside.

Layer the Meats: On each crispy tortilla, start layering with a combination of sliced salami and pepperoni. Each taco should have an equal distribution to ensure every bite is flavorful.

Add the Cheeses: Sprinkle crumbled feta cheese generously over the meats, followed by a layer of shredded aged cheddar.

Introduce the Olives: Top each taco with a few Kalamata olive slices for a briny contrast to the rich meats and cheeses.

Finish with Greens: Add a handful of arugula or mixed greens on top, followed by slices of fresh avocado.

Season and Garnish: Drizzle a little olive oil, and season with freshly ground black pepper. If desired, add a drizzle of hot honey or balsamic glaze for a touch of sweetness.

Serve Immediately: Arrange the crispy charcuterie tacos on a serving platter, garnished with fresh herbs for an aromatic finish. Enjoy while crispy!
