Ingredients
  

1 medium head of green cabbage, outer leaves removed and cut into 1-inch pieces

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon cumin

Salt and black pepper, to taste

2 tablespoons sesame seeds (optional)

2 green onions, chopped (for garnish)

Sriracha or soy sauce (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.

    Prepare the Cabbage: Rinse the cabbage pieces under cold water and pat them dry with a kitchen towel to remove excess moisture. The drier the cabbage, the crispier the chips will be.

      Season the Cabbage: In a large mixing bowl, combine the olive oil, garlic powder, onion powder, smoked paprika, cumin, salt, and black pepper. Add the cabbage pieces and toss gently until evenly coated.

        Spread on Baking Sheet: Arrange the seasoned cabbage pieces in a single layer on the prepared baking sheet. Ensure that they are not overlapping to achieve maximum crispiness.

          Bake: Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the edges of the cabbage chips are golden brown and crispy. Toss halfway through baking to ensure even cooking.

            Add Sesame Seeds: (Optional) In the last 5 minutes of baking, sprinkle sesame seeds over the cabbage for added crunch and flavor.

              Cool and Serve: Once done, remove the baking sheet from the oven and let the chips cool for a few minutes. Garnish with chopped green onions and serve warm with a side of Sriracha or soy sauce for dipping.
