14 oz extra-firm tofu, pressed and drained

1 cup panko breadcrumbs

1/4 cup nutritional yeast

1 tsp garlic powder

1 tsp onion powder

1/2 tsp smoked paprika

1/2 tsp salt

1/4 tsp black pepper

1/4 cup all-purpose flour (or gluten-free flour)

1/2 cup unsweetened plant milk (e.g., almond, soy)

2 tbsp olive oil or cooking spray

Optional: your favorite dipping sauce (e.g., sweet chili, barbecue, or tahini sauce)

Instructions
 

Prepare the Tofu: Preheat your oven to 400°F (200°C). Cut the pressed tofu into nugget-sized pieces, approximately 1-inch by 2-inch rectangles.

    Set Up Breading Station: In one bowl, place the all-purpose flour. In a second bowl, combine the plant milk with half the garlic powder, onion powder, smoked paprika, salt, and pepper. In a third bowl, mix the panko breadcrumbs, nutritional yeast, and remaining spices until well combined.

      Bread the Tofu: Take each piece of tofu and lightly coat it in flour, shaking off the excess. Then, dip it into the plant milk mixture, allowing any excess to drip off. Finally, coat the tofu nugget with the panko mixture, pressing gently to ensure it sticks. Place the breaded tofu nuggets on a parchment-lined baking sheet.

        Bake the Nuggets: Once all the tofu pieces are breaded, drizzle or spray them lightly with olive oil to encourage crispiness. Bake in the preheated oven for 25-30 minutes, flipping the nuggets halfway through, until they are golden brown and crispy.

          Serve: Remove from the oven and allow to cool slightly before serving. Pair with your favorite dipping sauce for an extra burst of flavor!
