12 large pasta sheets (lasagna or similar)

200g feta cheese, crumbled

1 cup ricotta cheese

1 cup fresh spinach, finely chopped

1 teaspoon garlic powder

1 teaspoon dried oregano

1 teaspoon red pepper flakes (optional)

2 cups marinara sauce

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 tablespoons olive oil

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Filling: In a mixing bowl, combine crumbled feta, ricotta, chopped spinach, garlic powder, oregano, red pepper flakes, salt, and pepper. Mix until well combined.

      Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta sheets and cook according to package instructions until al dente, about 5-7 minutes. Drain and lay them out on a clean kitchen towel to cool.

        Assemble the Rolls: Take one pasta sheet and spoon about 2 tablespoons of the filling at one end. Roll tightly from that end to form a roll. Repeat with the remaining sheets and filling.

          Prepare the Marinara Sauce: In a baking dish, spread 1 cup of marinara sauce evenly on the bottom. Place the pasta rolls seam-side down in the dish, fitting them snugly together.

            Add Remaining Sauce and Cheese: Pour the remaining marinara sauce over the top of the pasta rolls. Sprinkle the mozzarella and Parmesan cheese evenly over the sauce.

              Drizzle with Olive Oil: Drizzle the olive oil over the cheese for added crispiness.

                Bake: Cover the baking dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.

                  Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves before serving.
