2 medium zucchinis, sliced into 1/4-inch rounds

1/2 cup all-purpose flour (or gluten-free alternative)

1 large egg, beaten

1 cup panko breadcrumbs

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1/2 teaspoon paprika (optional)

Salt and pepper to taste

Cooking spray or olive oil spray

Prep the Zucchini: Start by washing and drying the zucchinis. Slice them into 1/4-inch rounds and set them aside.

    Set Up the Dipping Stations: In three separate bowls, prepare the breading stations:

      - In the first bowl, add the flour and a pinch of salt and pepper.

        - In the second bowl, beat the egg.

          - In the third bowl, combine panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, dried oregano, paprika, and a little salt and pepper.

            Coat the Zucchini: Take each zucchini slice and lightly coat it in the flour, shaking off excess. Next, dip it in the beaten egg, allowing any excess to drip off, and finally coat it in the breadcrumb mixture, pressing gently to ensure it sticks.

              Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 3-5 minutes.

                Air Frying: Arrange the coated zucchini slices in a single layer in the air fryer basket. Be careful not to overcrowd them; you may need to do this in batches. Lightly spray the tops of the zucchini with cooking spray.

                  Cook to Perfection: Air fry the zucchini for 10-12 minutes, flipping them halfway through the cooking time, until they are golden brown and crispy.
