8 oz pasta of choice (penne or fusilli work well)

2 medium zucchinis, sliced into half-moons

1 cup cherry tomatoes, halved

4 cloves garlic, minced

1 cup heavy cream

1 cup vegetable broth

1 tsp olive oil

1 tsp Italian seasoning (dried oregano, basil, thyme)

Salt and pepper to taste

½ cup grated Parmesan cheese (plus more for serving)

Fresh basil leaves for garnish

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, drain, and set aside.

    Sauté the Vegetables: In a large skillet, heat olive oil over medium heat. Add the sliced zucchinis and sauté for about 4-5 minutes until they begin to soften. Add the minced garlic and halved cherry tomatoes, continuing to cook for another 2-3 minutes until the garlic is fragrant and the tomatoes start to burst.

      Build the Sauce: Pour in the vegetable broth and bring to a simmer. Reduce heat to low and stir in the heavy cream. Allow the mixture to simmer for about 5 minutes, stirring occasionally.

        Combine Everything: Add the cooked pasta to the skillet, tossing to combine. If the sauce is too thick, gradually add reserved pasta water until the desired creaminess is reached.

          Season: Stir in the Italian seasoning, salt, and pepper to taste. Add the grated Parmesan cheese, mixing well until it melts into the sauce.

            Serve: Remove from heat and garnish with freshly torn basil leaves and additional Parmesan cheese, if desired. Serve hot and enjoy!
