Creamy Tuscan Chicken with Spinach

4 boneless, skinless chicken breasts

2 tablespoons olive oil

4 cloves garlic, minced

1 cup cherry tomatoes, halved

3 cups fresh spinach leaves

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

Fresh basil for garnish

Instructions
 

Prepare the Chicken: Season the chicken breasts with salt, pepper, and half of the dried oregano and basil on both sides.

    Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and sear for about 5-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Sauté Garlic and Tomatoes: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Then, add the cherry tomatoes and cook for an additional 2-3 minutes, allowing them to soften.

        Make the Creamy Sauce: Lower the heat to medium and pour in the heavy cream. Stir well while scraping the bottom of the skillet to incorporate the flavors.

          Add Spinach and Cheese: Gradually stir in the fresh spinach, allowing it to wilt. Add the Parmesan cheese and the remaining oregano and basil. Mix until the cheese is melted and the sauce is creamy and smooth.

            Return Chicken to the Skillet: Place the seared chicken breasts back into the skillet, coating them with the creamy sauce. Let everything simmer together for an additional 3-5 minutes to allow the flavors to meld.

              Garnish and Serve: Remove from heat and garnish with fresh basil. Serve the creamy Tuscan chicken over pasta, rice, or with crusty bread to soak up the sauce!
