8 oz (225 g) fettuccine or linguine pasta

2 boneless, skinless chicken breasts (about 1 lb/450 g)

Salt and black pepper, to taste

2 tablespoons olive oil

4 cloves garlic, minced

1 cup sun-dried tomatoes, chopped

1 cup heavy cream

1 cup chicken broth

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

2 cups fresh spinach

1/2 cup grated Parmesan cheese

Fresh basil leaves, for garnish

Cook the Pasta: In a large pot, bring salted water to a boil and cook the fettuccine or linguine according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of the pasta water.

    Prepare the Chicken: While the pasta is cooking, season the chicken breasts on both sides with salt and black pepper.
