12 oz penne pasta

2 tablespoons olive oil

1 lb chicken breast, cut into bite-sized pieces

3 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1 cup baby spinach

1 cup heavy cream

1/2 cup grated Parmesan cheese

1/4 cup sun-dried tomatoes, chopped

Fresh basil leaves for garnish

Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Sauté the Chicken: In a large skillet over medium heat, add olive oil. Once hot, add the chicken pieces and season with Italian seasoning, salt, and pepper. Cook for about 5-7 minutes, or until the chicken is golden brown and cooked through. Remove chicken from the skillet and set aside.

      Prepare Garlic and Tomatoes: In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Add in the cherry tomatoes and sun-dried tomatoes, cooking until the tomatoes are slightly softened (about 3-4 minutes).

        Create Creamy Sauce: Lower the heat and pour in the heavy cream while stirring continuously. Let it simmer for 2-3 minutes until it thickens slightly.

          Combine Ingredients: Add the cooked chicken and spinach into the sauce, stirring until the spinach wilts. Gradually mix in the Parmesan cheese until melted and smooth. If the sauce is too thick, add reserved pasta water a little at a time to reach desired consistency.
