Creamy Tuscan Chicken

2 large boneless, skinless chicken breasts

2 tablespoons olive oil

Salt and black pepper, to taste

1 teaspoon Italian seasoning

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup fresh spinach leaves

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon lemon juice

Fresh basil, for garnish (optional)

Instructions
 

Prep the Chicken: Season the chicken breasts with salt, black pepper, and Italian seasoning on both sides.

    Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for 6-7 minutes on each side or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Sauté Aromatics: In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 30 seconds until fragrant, being careful not to burn the garlic.

        Add Tomatoes and Spinach: Throw in the halved cherry tomatoes, and cook for 3-4 minutes until they start to soften. Next, add the fresh spinach and stir until wilted.

          Make the Cream Sauce: Reduce the heat to low, then pour in the heavy cream, stirring well to combine. Add the grated Parmesan cheese and lemon juice, mixing until the cheese has melted and the sauce is creamy. Taste and adjust seasoning with salt and pepper if needed.

            Combine Chicken and Sauce: Return the sautéed chicken to the skillet, simmering it in the creamy sauce for about 2-3 minutes to soak up those delightful flavors.
