12 oz cheese tortellini (fresh or frozen)

2 tablespoons olive oil

3 cloves garlic, minced

1 can (14 oz) diced tomatoes, with juice

1 cup heavy cream

1 teaspoon Italian seasoning

½ teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

1 cup fresh spinach, roughly chopped

½ cup grated Parmesan cheese, plus extra for serving

Fresh basil leaves for garnish

Cook the tortellini: In a large pot of boiling salted water, cook the cheese tortellini according to package instructions until al dente. Drain and set aside, reserving some pasta water.

    Sauté garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Be careful not to burn the garlic.
