12 oz (340g) pasta (penne or fusilli works best)

1 tablespoon olive oil

3 cloves garlic, minced

1 can (14 oz) crushed tomatoes

1 teaspoon dried basil

1 teaspoon dried oregano

½ teaspoon red pepper flakes (optional, for heat)

1 cup heavy cream

4 cups fresh spinach

½ cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil leaves for garnish

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside, reserving about ½ cup of the pasta water.

    Sauté Garlic: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1 minute, until fragrant.

      Make the Sauce: Stir in the crushed tomatoes, dried basil, oregano, and red pepper flakes (if using). Simmer for about 5-7 minutes, allowing the flavors to meld and the sauce to thicken slightly.

        Add Cream and Spinach: Lower the heat and pour in the heavy cream. Stir well to combine and let it simmer for another 2-3 minutes. Gently fold in the fresh spinach and let it wilt into the sauce.

          Combine Pasta and Sauce: Add the drained pasta to the skillet and toss to coat it evenly with the creamy tomato sauce. If the sauce is too thick, you can add a little reserved pasta water until you reach your desired consistency.

            Season and Serve: Stir in the grated Parmesan cheese, and season with salt and pepper to taste. Once everything is well combined, remove from heat.
