1 lb (450g) potato gnocchi (store-bought or homemade)

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 can (14 oz / 400g) crushed tomatoes

1 teaspoon dried basil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (adjust to taste)

1 cup heavy cream

1 cup grated Parmesan cheese

Salt and pepper, to taste

Fresh basil leaves, for garnish

Optional: 1 cup baby spinach or kale for added greens

Cook the Gnocchi: In a large pot of salted boiling water, cook the gnocchi according to package instructions. Once they float to the top, typically after about 2-3 minutes, transfer them onto a plate and set aside. Reserve 1/2 cup of pasta water.

    Sauté Onions and Garlic: In a large skillet over medium heat, add the olive oil. Once hot, add the chopped onion and cook for about 5 minutes until softened and translucent. Add the minced garlic and sauté for another minute until fragrant.

      Add Tomatoes and Spices: Pour in the crushed tomatoes. Stir in the dried basil, oregano, and red pepper flakes. Season with salt and pepper. Let this simmer for about 5 minutes to allow the flavors to meld.

        Make it Creamy: Lower the heat and stir in the heavy cream, allowing the mixture to become a silky sauce. Bring it to a gentle simmer, then add 3/4 cup of the grated Parmesan cheese, stirring until melted and creamy.

          Combine Gnocchi and Spinach: Gently fold in the cooked gnocchi into the creamy tomato sauce. If using, add the baby spinach or kale and cook for an additional 1-2 minutes until the greens wilt. If the sauce is too thick, gradually add reserved pasta water until you reach your desired consistency.
