Ingredients

1 lb (450g) potato gnocchi (store-bought or homemade)

2 tablespoons olive oil

2 cloves garlic, minced

1 can (14 oz) crushed tomatoes

1 cup heavy cream

1 teaspoon sugar (optional, to balance acidity)

Salt and pepper to taste

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (adjust to taste)

1 cup fresh basil leaves, chopped (plus extra for garnish)

1/2 cup grated Parmesan cheese (plus more for serving)

Instructions

Cook the Gnocchi: In a large pot of boiling salted water, cook the gnocchi according to package instructions. They are done when they float to the surface. Drain and set aside.

Prepare the Sauce: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.

Add Tomatoes: Pour in the crushed tomatoes and stir to combine. If you like a hint of sweetness, add the teaspoon of sugar. Let it simmer for 5 minutes.

Cream It Up: Lower the heat and gradually stir in the heavy cream. Mix well, ensuring the sauce is smooth. Season with salt, pepper, oregano, and red pepper flakes. Allow the sauce to simmer for another 5-7 minutes, letting it thicken slightly.

Incorporate the Gnocchi: Add the cooked gnocchi to the skillet, gently tossing them in the creamy sauce until they are evenly coated.

Add Fresh Basil: Remove the skillet from heat and fold in the chopped basil and grated Parmesan cheese, mixing until well combined.

Serve: Plate the creamy tomato basil gnocchi hot, garnishing with additional fresh basil and a sprinkle of Parmesan cheese on top.
