Creamy Tomato Basil Chicken and Zucchini Noodles

2 medium chicken breasts, boneless and skinless

2 medium zucchini, spiralized into noodles (zoodles)

1 cup cherry tomatoes, halved

1 cup heavy cream

1/2 cup grated Parmesan cheese

3 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon Italian seasoning

Salt and pepper, to taste

1/4 cup fresh basil, chopped (plus extra for garnish)

1/2 teaspoon red pepper flakes (optional)

Juice of 1/2 lemon

Prepare the Chicken: Season both sides of the chicken breasts with salt, pepper, and Italian seasoning.

    Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C). Remove the chicken from the skillet and set aside.

      Sauté Garlic and Tomatoes: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Then, add the halved cherry tomatoes and cook for 2-3 minutes until they start to soften.
