1 cup sun-dried tomatoes in olive oil, drained and roughly chopped

1 cup heavy cream

1/2 cup grated Parmesan cheese

3 cloves garlic, minced

1 tablespoon olive oil (from the sun-dried tomatoes jar)

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional, for heat)

Salt and pepper to taste

Fresh basil leaves, for garnish

Extra Parmesan cheese, for serving

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the rest and set aside.

    Sauté Garlic: In a large skillet over medium heat, add the olive oil from the sun-dried tomatoes along with the minced garlic. Sauté for about 1-2 minutes until fragrant, being careful not to burn the garlic.

      Add Sun-Dried Tomatoes: Stir in the chopped sun-dried tomatoes and Italian seasoning. Cook for another 2-3 minutes until they are heated through.

        Create the Sauce: Pour in the heavy cream and bring the mixture to a gentle simmer. Gradually stir in the grated Parmesan cheese until melted and combined. If the sauce is too thick, add a little reserved pasta water to achieve your desired consistency.

          Mix in the Pasta: Add the drained pasta to the skillet, tossing gently to coat it in the creamy sauce. Season with salt, pepper, and red pepper flakes if using.
