1 large spaghetti squash

2 cups fresh spinach leaves

1/3 cup basil leaves

1/4 cup walnuts (toasted)

2 cloves garlic

1/2 cup grated Parmesan cheese

1/3 cup olive oil

1/2 cup heavy cream (or coconut cream for a dairy-free option)

Salt and pepper to taste

Red pepper flakes (optional, for garnish)

Additional Parmesan cheese for serving

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Spaghetti Squash: Carefully slice the spaghetti squash in half lengthwise. Scoop out the seeds and place the squash halves cut side down on a baking sheet. Roast for about 40-50 minutes, or until the flesh is tender and easily pulled into strands with a fork.

      Make the Spinach Pesto: While the squash is roasting, prepare the creamy spinach pesto. In a food processor, combine the spinach, basil, toasted walnuts, garlic, Parmesan cheese, and olive oil. Blend until smooth. If needed, scrape down the sides and continue blending until fully incorporated. Season with salt and pepper to taste.

        Create the Creamy Sauce: Transfer the pesto to a saucepan over low heat. Stir in the heavy cream and heat gently, allowing the mixture to warm up and combine for about 5 minutes. Avoid boiling. Adjust the seasoning if necessary.
