Creamy Spinach Artichoke Pasta

12 oz pasta (preferably fettuccine or penne)

2 tbsp olive oil

3 cloves garlic, minced

1 cup frozen spinach, thawed and drained

1 cup canned artichoke hearts, drained and chopped

1 cup heavy cream

1 cup cream cheese, softened

½ cup grated Parmesan cheese

½ tsp red pepper flakes (adjust to taste)

Salt and pepper to taste

Fresh basil or parsley for garnish

1 lemon, zested and juiced (optional)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set the pasta aside.

    Sauté Garlic: In a large skillet over medium heat, add olive oil. Once hot, add the minced garlic and sauté for about 1 minute, until fragrant. Be careful not to brown the garlic.

      Add Spinach and Artichokes: Stir in the thawed spinach and chopped artichokes, cooking for another 2-3 minutes until heated through.

        Make the Sauce: Reduce the heat to low and add the heavy cream and softened cream cheese to the skillet. Stir until the cream cheese is melted and the mixture is smooth and well combined.

          Incorporate Cheese: Gradually add in the grated Parmesan cheese, stirring until fully incorporated and the sauce thickens slightly. If the sauce is too thick, gradually add reserved pasta water until you reach your desired consistency.

            Season: Add the red pepper flakes, salt, and pepper, tasting as you go to adjust seasoning as necessary.

              Combine with Pasta: Add the drained pasta to the skillet, tossing to coat the noodles evenly in the creamy sauce. If necessary, add a bit more reserved pasta water to loosen the sauce.

                Optional Zest and Juice: For an added layer of brightness, stir in lemon zest and juice before serving.

                  Garnish and Serve: Remove from heat, garnish with fresh basil or parsley, and serve immediately for a deliciously creamy meal!
