4 large eggs

2 cups fresh spinach, washed and roughly chopped

1/2 cup heavy cream

1/4 cup grated Parmesan cheese

2 tablespoons unsalted butter

2 cloves garlic, minced

Salt and pepper, to taste

Pinch of nutmeg (optional)

Fresh chives or parsley, chopped (for garnish)

Instructions
 

Sauté the Spinach: In a large skillet, melt the butter over medium heat. Add the minced garlic and cook for about 1 minute until fragrant. Add the chopped spinach and sauté until wilted, approximately 2-3 minutes. Season with a pinch of salt and pepper.

    Prepare the Cream Mixture: In a medium bowl, combine the heavy cream, grated Parmesan cheese, and a pinch of nutmeg (if using). Whisk until smooth and set aside.

      Cook the Eggs: Push the sautéed spinach to one side of the skillet. Crack the eggs into the empty space in the skillet. Cook sunny-side up for about 3-4 minutes or until the whites are set but the yolks are still runny. Alternatively, you can scramble the eggs if you prefer.

        Combine: Once the eggs are cooked to your liking, pour the creamy spinach mixture over the spinach and eggs in the skillet. Allow it to heat through for an additional minute, just until everything is warmed and mixed.

          Garnish & Serve: Remove from heat and garnish with freshly chopped chives or parsley. Serve immediately, either on toast or as a standalone dish.
