Creamy Spinach and Artichoke Chicken Skillet

4 boneless, skinless chicken breasts

1 cup fresh spinach, chopped

1 can (14 oz) artichoke hearts, drained and chopped

1 cup cream cheese, softened

1 cup heavy cream

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1 medium onion, finely chopped

2 tablespoons olive oil

1 teaspoon Italian seasoning

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Chicken: Season the chicken breasts with salt, pepper, and Italian seasoning on both sides.

    Cook the Chicken: In a large skillet over medium heat, heat the olive oil. Add the chicken breasts and cook for about 7-8 minutes on each side until golden brown and cooked through. Remove chicken from skillet and set aside.

      Sauté Vegetables: In the same skillet, add the chopped onions and minced garlic. Sauté for about 3-4 minutes until the onion becomes translucent.

        Make the Sauce: Lower the heat and add the cream cheese, stirring until melted. Gradually pour in the heavy cream, mixing until smooth and creamy.

          Add Spinach and Artichokes: Stir in the chopped spinach and artichoke hearts. Cook for about 2-3 minutes until the spinach has wilted.

            Combine with Cheese: Mix in the shredded mozzarella and grated Parmesan cheese, stirring until everything is well-combined and the cheese is melted.

              Reintroduce Chicken: Return the cooked chicken to the skillet, spooning the creamy mixture over the top. Let it simmer on low for 2-3 minutes to heat through.

                Garnish and Serve: Once everything is heated, garnish with chopped parsley. Serve hot with rice, pasta, or crusty bread for dipping.
