1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

8 oz (225g) penne or rotini pasta

1 tbsp olive oil

1 medium onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

1 cup corn (frozen or canned, drained)

1 can (15 oz) black beans, rinsed and drained

1 cup diced tomatoes (canned or fresh)

1 cup heavy cream

1 cup shredded cheddar cheese

1 tsp chili powder

1 tsp cumin

1/2 tsp smoked paprika

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Cook the Pasta: Begin by boiling a large pot of salted water. Add the pasta and cook according to the package instructions until al dente. Drain and set aside.

    Sauté Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the diced chicken pieces, season with salt, pepper, chili powder, cumin, and smoked paprika, and cook until browned and cooked through, about 6-8 minutes.

      Add Vegetables: Once the chicken is cooked, add the diced onion and red bell pepper to the skillet. Sauté for about 3-4 minutes until the vegetables are softened. Then, stir in the minced garlic and cook for an additional minute until fragrant.

        Mix in Remaining Ingredients: Add the corn, black beans, and diced tomatoes to the skillet. Stir everything together, allowing it to heat through for about 2-3 minutes.

          Create the Sauce: Lower the heat and pour in the heavy cream, stirring to combine. Allow the mixture to simmer gently for about 5 minutes, letting the flavors meld and the sauce thicken slightly.

            Combine with Pasta: Add the cooked pasta to the skillet and fold it into the creamy mixture until well combined. Gradually stir in the shredded cheddar cheese, allowing it to melt into the sauce.

              Serve and Garnish: Taste the pasta and adjust the seasoning with additional salt and pepper if needed. Serve hot, garnished with freshly chopped cilantro and lime wedges on the side for a zesty finish.
