1 medium head of cauliflower, chopped into florets

1 medium onion, diced

2 garlic cloves, minced

4 cups vegetable broth

1 cup heavy cream (or coconut cream for a vegan option)

2 tablespoons olive oil

1 tablespoon fresh sage, chopped (or 1 teaspoon dried sage)

Salt and pepper, to taste

Zest of 1 lemon

Fresh parsley, for garnish

Sauté the Base: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Then, add the minced garlic and cook for an additional minute until fragrant.

    Cook the Cauliflower: Add the chopped cauliflower to the pot and stir for about 2 minutes. This helps to develop the flavors.

      Add Broth and Herbs: Pour in the vegetable broth and bring to a boil. Reduce the heat and add the chopped sage. Simmer until the cauliflower is tender, about 15-20 minutes.

        Blend the Soup: Once the cauliflower is soft, remove the pot from heat. Using an immersion blender, blend the soup until it’s completely smooth. If you don’t have an immersion blender, carefully transfer the soup to a blender in batches.
